Lemon Cloud Bars

Ingredients:

  • 1 can (21 ounces) lemon pie filling
  • 1 box (16 ounces) angel food cake mix
  • Powdered sugar, for dusting (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper for easy removal.
  2. In a large mixing bowl, empty the contents of the lemon pie filling and the angel food cake mix.
  3. Gently fold the ingredients together until well combined. Be careful not to overmix; it’s okay if there are a few lumps.
  4. Pour the mixture into the prepared baking dish, spreading it out evenly.
  5. Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the edges are starting to pull away from the sides of the dish. The mixture will puff up dramatically while baking.
  6. Remove the dish from the oven and allow it to cool completely. As it cools, it will deflate slightly, forming the characteristic texture of lemon bars.
  7. Once cooled, cut into squares or bars. Dust with powdered sugar if desired for an extra touch of sweetness.
